Baked Potato Soup
I can't just heat up regular baked potato soup because I am allergic to dairy. This recipe is almost as easy though.
Ingredients
- One box (32 fl oz) potato soup
- 32 oz frozen home fries (they can also be called diced or southern style hashbrowns)
- 1 cup bacon bits
- 1 cup vegan cheddar cheese
- 2 tbsp vegan greek yogurt
- extra bacon / cheese / yogurt if you want to serve it fancy
Directions
- sautee the bacon bits in a large saucepan to crisp them & render the fat
- add the soup & home fries to the saucepan
- heat the soup until the potatoes are warm/cooked
- add the cheese and yogurt
- serve
